Quick Rava Appe: A Speedy Delight for Any Mealtime!

When hunger strikes and time is of the essence, having a quick and delicious recipe up your sleeve is a lifesaver. Enter the "Instant Rava Appe" – a delightful South Indian dish that’s not just speedy but also incredibly flavorsome. Let’s dive into this instant recipe that’s perfect for breakfast, snacks, or even as a side dish for any meal!

Ingredients

1 cup Rava (semolina)
1/2 cup Curd (yogurt)
1 tsp Salt
1 tsp Mustard seeds
1 strand Curry leaves
1 cup Onion, finely chopped
1 tbsp Capsicum, finely chopped
1 tbsp Carrots, finely chopped
1-2 Green chilies, finely chopped
1 tbsp Oil
1 tsp Baking soda

For Serving

  • 2 cups thick yogurt
  • Tamarind chutney
  • Mint-coriander chutney
  • Chaat masala
  • Roasted cumin powder
  • Red chili powder
  • Chopped coriander leaves
  • Sev (crispy chickpea noodles)
  • Pomegranate seeds (optional)

Directions

  1. Prepare the Batter

    • In a mixing bowl, combine rava (semolina) and curd (yogurt). Mix well and allow it to rest for 10 minutes. This helps the rava absorb the moisture.
  2. Prepare the Vegetables

    • Heat oil in a pan. Add mustard seeds and let them crackle. Add curry leaves and sauté for a few seconds.
    • Add chopped onions, green chilies, capsicum, and carrots. Sauté until the vegetables turn tender and the raw smell dissipates. Allow them to cool slightly.
  3. Combine Batter and Vegetables

    • Add the sautéed vegetables to the rava-curd mixture. Mix thoroughly.
    • Add salt and mix well. Adjust the batter consistency by adding a little water if it's too thick. It should be of dropping consistency.
  4. Prepare the Appe

    • Heat the appe pan and add a drop of oil into each mold.
    • Sprinkle a pinch of baking soda into the batter and mix gently.
    • Pour spoonfuls of the batter into each mold, filling them about 3/4th full.
  5. Cook the Appe

    • Cover the pan and cook the appe on low-medium heat for about 2-3 minutes.
    • Once the bottom side turns golden brown, flip them using a skewer or spoon. Cook the other side until it achieves a similar golden hue.
  6. Serve Hot

    • Remove the appe from the pan and serve them hot with a side of coconut chutney or any dip of your choice.
