Ingredients

  • 250g Paneer (cottage cheese), cubed
  • 300g Spinach (palak), washed and chopped
  • 2 tablespoons Oil or Ghee (clarified butter)
  • 1 teaspoon Cumin seeds
  • 1 Onion, finely chopped
  • 3-4 Garlic cloves, minced
  • 1 Green chili, finely chopped (optional)
  • 1-inch Ginger, grated
  • 2 Tomatoes, pureed
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • Salt to taste
  • 1/2 teaspoon Kasuri Methi (dried fenugreek leaves)
  • Fresh cream for garnish (optional)

Directions

  1. Blanch and Blend the Spinach

    • Boil water in a pot and blanch the chopped spinach for 2-3 minutes. Drain and immediately transfer to ice-cold water to retain its green color.
    • Blend the blanched spinach into a smooth puree. Set aside.
  2. Sauté Paneer Cubes

    • Heat a tablespoon of oil in a pan. Sauté the paneer cubes until they turn golden brown. Remove and set aside.
  3. Prepare the Gravy

    • In the same pan, add another tablespoon of oil or ghee. Add cumin seeds and let them splutter.
    • Add finely chopped onions and sauté until they turn translucent. Add minced garlic, grated ginger, and green chili (if using). Cook until the raw aroma dissipates.
  4. Add Tomato Puree and Spices

    • Pour in the tomato puree and cook until the oil starts to separate from the sides.
    • Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a couple of minutes.
  5. Combine Spinach Puree

    • Pour the spinach puree into the pan and stir. Let it simmer for 5-7 minutes on low heat, allowing the flavors to meld.
  6. Introduce Paneer and Finish

    • Gently add the sautéed paneer cubes into the spinach gravy. Crush kasuri methi between your palms and sprinkle it over the dish.
    • Simmer for a few more minutes, allowing the paneer to absorb the flavors.
  7. Garnish and Serve

    • Drizzle with a spoonful of fresh cream for added richness (optional).
    • Serve hot with naan, roti, or steamed rice, relishing the creamy goodness of Palak Paneer.
